Мне нужно скрыть составной (и всех детей внутри). Просто установка setVisible(false) сохранит пространство композита.

Вот какой код, который делает то, что вы хотите. Я использую GridData#exclude в комбинации с Control#setVisible(boolean), чтобы скрыть/показать Composite:
