Вам нужно будет позвонить

[tableView beginUpdates] 

и

[tableView endUpdates] 

до и после вызова методов вставки/удаления, как показано ниже:

В соответствии с Apple здесь:

Анимация пакетной вставки, удаления и перезагрузки строк и разделы, вызовите соответствующие методы в блоке анимации определяемый последовательными вызовами beginUpdates и endUpdates. если ты Не вызывайте методы вставки, удаления и перезагрузки в этом индексы блоков, строк и секций могут быть недействительными. Звонки на beginUpdates и endUpdates могут быть вложенными; все индексы обрабатываются так, как если бы они были только внешний блок обновления.

В конце блока, т.е. после возврата endUpdates - table view запрашивает свой источник данных и делегирует, как обычно, для строк и данные раздела. Таким образом, объекты коллекции, поддерживающие представление таблицы следует обновить, чтобы отразить новые или удаленные строки или разделы.

Вам нужно будет вызвать [tableView beginUpdates] и [tableView endUpdates] до и после вызова методов вставки/удаления соответственно.

Примером может служить Apple по приведенной выше ссылке.

Примечание. Если элементы массива и таблицы не синхронизированы, без вызовов begin/end будет выбрано исключение.

Предложение: сначала попробуйте withRowAnimation:UITableViewRowAnimationAutomatic
